Granola - SCD Legal

About the Recipe

This granola is great to eat with SCD yogurt. It is very filling and delicious! I especially like to eat it when it is warm right after it comes out of the oven, yum!

Ingredients

  • 1 1/2 cups of sliced almonds

  • 1 1/2 cups of unsweetened coconut flakes or shredded coconut

  • 1 cup of chopped walnuts

  • 1 cup of chopped pecans

  • 1/2 cup of raisins (you can leave these out if you don't like raisins)

  • 2 teaspoons of cinnamon

  • 1/2 teaspoon of salt

  • 1/3 cup of melted coconut oil

  • 1/3 cup of melted honey

Preparation

  1. Preheat oven to 275 degrees      Fahrenheit.

  2. Line a baking sheet (preferably one that has as small edge) with parchment paper.

  3. In a large bowl mix all of the nuts, cinnamon and salt.

  4. Melt the coconut oil and honey and mix the two of them together.

  5. Poor the coconut oil and honey over the ingrediants in the bowl and stir well.

  6. Spread the mixture onto the baking sheet into a single layer.

  7. Bake at 275 degrees Fahrenheit for about 45 minutes, flipping the mixture over every 10-12      minutes.

  8. Remove from pan immediately and store in a glass container.

This granola should last up to a week.
