Frozen Carrot Bars

About the Recipe

I usually make these bars during the summer. They are nice cold treat on a hot day! They are full of flavor, will keep you full, and are good for you!

Ingredients

1 cup of grated carrots

1/2 cup of whole almonds

1/2 cup of whole walnuts

1/2 cup of raisins

1 teaspoon of cinnamon

1/4 teaspoon of sea salt

1 tablespoon of melted coconut oil

1 tablespoon of SCD legal applesauce

1 teaspoon of grated lemon zest

Preparation

  1. In a food processor, mix the almonds, walnuts, cinnamon and salt until it is finely ground.

  2. Add in the raisins and process again for only about 10 seconds.

  3. In a large bowl combine the ingrediants from the food processor and all remaining ingrediants and stir until all is thoroughly mixed.

  4. Line an 8x8 pan or dish with parchment paper.

  5. Transfer the mix to the pan and press it firmly and evenly into the pan.

  6. Freeze for at least an hour. Then cut into squares.
