About the Recipe

Delicious SCD Legal Chicken Soup - includes instructions on how to make it for the intro diet too!

Ingredients

  • 1 1/2 cups of carrots chopped (I chop up baby carrots)

  • During the intro / beginner's diet you will need to cook and puree the carrots and then add them back to the soup

  • 2 cups of shredded cooked chicken  

  • You can use boiled chicken breast or a pre-cooked rotisserie chicken.  I buy a cooked rotisserie chicken and remove all of he skin and then shred the chicken.  Be sure to remove the skin as it may have "illegal" ingrediants on it.

  • If you are on the intro / beginner's diet, puree the chicken.  

  • 2-3 stalks of chopped celery

  • Eliminate this ingredient if you are on the intro / beginner's diet.  

  • 1-2 chopped zucchini

  • Eliminate this ingredient if you are on the intro / beginner's diet.

  • 1-2 chopped yellow squash

  • Eliminate this ingredient if you are on the intro / beginner's diet.

  • 32 oz. of chicken stock

  • You can make your own SCD legal chicken stock or look for one in the store that does not have any illegal ingrediants in it.  Here are a few that are legal:  Imagine Organic Free Range Chicken Broth and Kettle & Fire Organic Chicken Broth.

  • 1/2 tablespoon of sea salt

  • 1/4 teaspoon of white pepper

  • Eliminate this ingrediant if you are on the intro / beginner's diet. 

Preparation

Mix all of the ingrediants into a large stock pot and cook until the carrots are soft (usually about 30 minutes). If you don't think the 32 oz. of chicken stocks is enough broth for the soup then add some water to it until you have the desired broth amount. I usually end up adding about another 1 to 1 1/2 cups of water to mine.


I like to serve mine with a little shredded parmesan cheese on top (avoid this during the beginner's diet).


NOTE FOR SCD BEGINNERS ON THE INTRO DIET: If you are using this soup as part of the into diet only use the chicken, chicken broth, pureed carrots, and sea salt to make your soup.
