About the Recipe
This chicken salad is delicious during the summer and is an easy meal for work week lunches. It is also enjoyed by those not on the SCD and is great to serve at a party.
Ingredients
4 chicken breast
1/3 cup SCD legal mayonnaise
1/3 cup of sliced celery
1/3 - 1/2 cup of sliced grapes
Salt and pepper to taste
Preparation
Boil/cook chicken in large pot on the stove.
Shred the chickens immediately after cooking. For a finer texture you can also put the chicken in a food processor to shred.
In a large bowl combine all of the ingrediants and stir.
Refrigerate and eat within 4-5 days.
