Easy SCD legal pancakes!

Ingredients
2 very ripe bananas
1 tsp of vanilla extract
2 eggs
1/3 cup of almond flour
2 tbsp of coconut flour
a dash of salt if desired
1 tbsp of coconut oil (for frying) - using coconut oil for these tastes better than using butter
Preparation
In mixing bowl, mash the bananas until there are very few chunks.
Add the remaining ingredients and mix thoroughly. You can use a mixer if you want
Heat the coconut oil in a pan.
Spoon out batter into pan making the size of pancakes you want. It is easier to flip smaller pancakes and they cook faster so I usually make them about 4 inches round or less.
When the pancakes start to bubble on top that means they are ready to flip.
Keep an eye on them and flip as needed.
I usually top mine with honey since maple syrup is not SCD legal.
